Glutinous Rice Flour Dough
- 45 g glutinous rice flour
- 10 g corn flour
- 30 g Sugar
- 85 g Milk
- 10 g Butter
- 0.25 c whipping cream
- 1 tbsp Sugar
- 2 tbsp cookie butter
- crushed cookies

Preparing the Mochi Dough
1. In a pan, add glutinous rice flour, corn flour, sugar and milk; mix until combined.
2. Add butter; mix and cook on medium heat until soft and sticky dough is formed.
3. Let it cool a bit.
Preparing the Cream Filling
1. In a bowl, add cream, sugar and Biscoff cookie butter.
2. Mix until stiff peaks are formed and refrigerate.
Assembling the Mochi
1. Use hand gloves and knead the mochi until stretchy; divide into equal parts.
2. Sprinkle corn flour on a clean surface and flatten the mochi.
3. Place in a small cup; add the prepared cream, crushed cookies and more cream to cover the crushed cookies in the middle.
4. Cover the mochi and pinch the dough together.
5. Cut off the excess mochi and dust with corn flour to prevent sticking.
Final Touches
1. Decorate with cookie butter and cookie (optional).
2. Enjoy!
