Ingredients

- 0.25 c Feta cheese, 2 oz, crumbles
- 1 tbsp harissa
- 1 Large egg
- 1 tbsp Fresh dill, chopped
- Avocado cooking oil spray
- 1 small tortilla

Directions

Preparing the Feta and Egg
1. Heat a small skillet over medium heat, add the feta cheese around the outside circle of the pan.
2. Allow the feta cheese to melt for 2-3 minutes.
3. Add the harissa in the middle of the pan and gently crack an egg in the center of the pan over the harissa.
4. Allow the egg to cook to your liking, 3-5 minutes.
5. When the egg is cooked and the cheese has created a golden brown crust, sprinkle it with fresh dill.
6. Then gently remove from the pan using a spatula and set on a plate.
Preparing the Tortilla
1. Spray cooking oil on the skillet and add the tortilla.
2. Cook until lightly golden, 1-2 minutes per side.
3. Slide the crispy feta and eggs on top of the tortilla and serve.
