- 4 salmon fillets
- 5 oz baby arugula and/or spinach
- 1 c fresh basil
- 1.5 c parmesan
- 0.333 c olive oil
- 2 tbsp softened butter
- 2 cloves Garlic
- 2 Lemons, zest
- salt and pepper, to taste

1. Preheat oven to 400F.
2. Line a rimmed baking pan with parchment paper.
Making the Pesto
1. In a food processor, combine the arugula, basil, garlic cloves, 1/2 cup parmesan, and zest of 1 lemon.
2. Pulse until almost smooth.
3. While on low speed, gradually drizzle in the olive oil.
4. Add the butter and pulse until smooth.
5. Adjust to taste with salt and black pepper.
Assembling the Salmon
1. Add the salmon fillets to the prepared pan.
2. Generously spread the pesto over each salmon fillet, then top with the remaining parmesan and lemon zest.
1. Bake 20-25 minutes, until fully cooked.
1. Enjoy warm with more freshly grated parmesan and lemon zest!
