- 4 slice Bacon, chopped
- 0.25 cup Dried peas, cooked
- 0.5 Onion, chopped
- 1 clove Garlic, chopped
- 1 Potato, diced
- 1 Carrot, diced
- 5 cup Chicken stock
- 1 cup Cheddar cheese, grated

1. In a pot, sear the bacon until it renders its fat and turns brown and crunchy. Remove from the pot, draining some of the fat. Heat the pot again and in the remaining bacon fat, cook the peas, onion, garlic, potato and carrot. Pour the stock and bring to a boil; simmer for 30 minutes or until the vegetables soften.
2. Transfer half of the soup to the blender and carefully blend.
3. Return to the pot, simmer on low heat and add the cheese. Stir until the cheese melts completely and the soup thickens.
4. Serve in bowls with the bacon and pea mixture.
5. Share and enjoy.
1. This is an excellent soup for kids, you can even add more vegetables like broccoli or spinach.
