- 1 duck rilette with foie gras
- 1 red hot chilli pepper Monterey Jack cheese
- 1 Black pepper, to sprinkle
- 1 egg wash

Preparing the Pastry Dough
1. Cut the pastry dough into flat discs, about 4 inches in diameter will do.
Filling the Pastry
1. Fill the middle of each disc with a scoop of duck rilette, a slice of cheese (1 cm thick) and a sprinkle of black pepper.
Sealing the Pastry
1. Brush the edge with egg wash and fold in half.
2. Press the edges together to seal them and then use a fork to press a fun pattern.
Baking the Pastry
1. Bake for 15-20 minutes or until slightly golden at 350•F.
