- 4 Tbs Olive oil
- 0.5 Onion, thinly sliced
- 400 g Potatoes, in thin half-circle slices, blanched
- 70 g Chickpea flour
- 0.75 cup Water
- 1 tsp Ground turmeric
- pinch salt and fresh black pepper
- 0.25 cup olives

1. Heat three tbsp of olive oil in a large pan and add the onion and potatoes; you can do this in batches if needed. Cook until the potatoes are soft and the onion si translucent.
2. In a bowl, add the chickpea flour with water and turmeric. Add the cooked potatoes, then salt and pepper to taste.
3. Heat the remaining olive oil in a medium pan and pour in the mix for the tortilla. Cook por 5 minutes on each side or until it reaches your preferred texture.
4. Transfer to a plate and dress with the olive halves.
5. Share and enjoy.
