- 5 clove Garlic, chopped
- 1 tsp Cumin seeds, toasted
- pinch saffron strands
- 3 twig Cilantro, washed, disinfected, chopped
- 0.25 tsp Ground cinnamon
- 1 Tbs Sweet paprika
- 2 Tbs Lemon juice
- pinch salt and fresh black pepper
- 0.5 cup Olive oil
- 300 g Mushrooms, halved
- 1 Eggplant, in medium sized cubes
- 2 cup pearl onion
- 2 cup White rice, cooked

1. In a mortar, mix the garlic, cumin, saffron and cilantro. Pestle all the ingredients and mix with cinnamon, paprika, lemon juice, salt, pepper and olive oil. Marinate the vegetables with this mix for a couple of hours or overnight. Assemble the pinchos (skewers) alternating each vegetable and cook in a griddle for 2 minutes on each side or until they are golden and cooked; you could also bake them at 180ºC/350ºF for 15 minutes or until golden and softened.
2. Serve with rice, share and enjoy.
