- 4 tbsp Butter
- 2 c Onions, diced
- 3 clove Garlic, minced
- 1 lb Mushrooms, sliced (1 cup reserved & sautéed for garnish)
- 2 tsp dried dill
- 1 tbsp Sweet paprika
- 1 tbsp Soy sauce
- 2 c broth
- 2 tbsp Cornstarch
- 1 c Heavy cream
- 0.5 c Sour cream
- 0.25 Lemon, juiced
- 0.25 c Parsley
- salt & pepper
- pinch Cayenne pepper

Preparing the Soup Base
1. Melt butter into a pot or Dutch oven.
2. Add onions and sauté until soft.
3. Add in mushrooms and cook for 5-6 minutes.
4. Stir in dill, paprika, soy sauce, and broth.
5. Simmer for 15 minutes.
Adding the Thickener
1. In a separate small bowl or measuring cup, mix together milk and cornstarch until blended.
2. Stir into soup until completely combined.
3. Cover with lid and simmer for another 10 minutes and stir occasionally.
Final Touches
1. Stir in sour cream, lemon juice, parsley, salt, pepper, and cayenne.
2. Cook on low for about 3-4 minutes. Don't let it boil.
Serving Suggestions
1. Serve and enjoy with sour cream, sautéed mushrooms, and parsley!
