- 1 lbs Carrots
- 1 Garlic, head
- 1 Onion, red or white
- 0.5 c cashew nuts
- 3 c oat milk, or your preferred unsweetened plant-based milk, start with less, adjust as needed
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
- 2 tbsp Olive oil

Preparation of vegetables
1. Start by washing and removing the stems from the carrots.
2. Roughly chop them (the smaller you cut them, the quicker they will be roasted).
3. Cut the tip of the garlic head off and peel and roughly chop the onion.
4. On a lined baking tray, arrange carrots, garlic, and onion.
5. Sprinkle with salt and pepper, and drizzle with olive oil.
6. Roast at 395 degrees F for about 45 minutes until the carrots are soft.
7. Remove the onion and garlic after 25 minutes.
Preparation of sauce and pasta
1. After the veggies have cooled down, in a blender, combine the roasted carrots, oat milk, soaked cashews, garlic, and onion.
2. Blend until the sauce is smooth and creamy.
3. Pour the sauce into a pan, reheat if necessary, and add your favorite pasta.
4. Coat well, and serve with freshly chopped parsley and cracked pepper.
