Ingredients

Dough
- 2 c lukewarm water
- 1 tbsp Honey
- 2 tsp yeast
- 4 c All purpose flour
- 2 tsp Salt
- 3 tbsp EVOO
Toppings
- 0.5 c EVOO
- coarse salt
- roasted pepper
- olives
- Rosemary, soaked in EVOO so it doesn’t burn while baking

Directions

Preparing the Dough
1. In a bowl add lukewarm water, honey and whisk. Let it bloom for 5 minutes.
2. In a separate bowl add flour and salt.
3. Mix and then add the yeast mixture.
4. Knead the dough and then pour in the EVOO.
5. Scrape the sides and cover for 30 minutes.
6. Leave it in a warm area. I prefer to place it in the oven with the light on.
7. After 30 minutes, cover your hands with water and stretch and fold the dough.
8. Take one side of the dough. Lift, stretch it to the other side.
9. Keep rotating the bowl and repeat it 4 times on each side.
10. Cover for 30 additional minutes.
11. Then cover with plastic wrap and leave it in the fridge for 10-12 hours.
Preparing the Baking Tray
1. Next day, it should have tripled in size.
2. Generously grease the baking tray with 1/3 cup of olive oil.
3. Place the dough in the baking tray.
4. Cover with damp cloth and let it sit for 1 hour (preferably in the oven with only light on) for last proofing.
Adding Toppings and Baking
1. Now generously cover your hands with extra virgin olive oil and dimple the dough with your fingers.
2. Add your favorite toppings like sea salt, rosemary, olives, tomatoes, roasted peppers or garlic confit.
3. Preheat the oven to 400 degrees Fahrenheit.
4. Let the focaccia bake for 20 minutes on the bottom rack and then move it onto the top rack for 7-10 minutes.
Serving
1. Once baked, let it rest for 10 minutes before removing from the pan.
2. Slice and enjoy with even more olive oil of course!
