- 1 c marinara sauce
- 1 c cottage cheese
- 0.5 c Parmigiano reggiano, freshly grated
- 2 tbsp Butter
- 0.25 tsp Red pepper flakes, crushed
- Parsley, chopped for serving

Cooking the pasta
1. Bring a large pot of heavily salted water to a boil.
2. Cook the pasta until al dente according to package directions.
3. Reserve 1 cup pasta water, drain and return the pasta to the pot, covered.
Sauce Preparation
1. Place marinara, cottage cheese, Parmigiano Reggiano, butter, crushed red pepper, and pasta water in a high speed blender and blend until smooth and creamy, 1-2 minutes.
Final Assembly
1. Transfer the sauce on top of the cooked pasta and toss until combined and heated through.
2. Serve immediately with more crushed pepper and chopped parsley, if desired.
