Chicken Marinade
- 1 lb Chicken breast
- 450 ml Coconut milk
- 4 tbsp Turmeric powder, (use half to marinate the chicken and the rest to season the curry)
- 2 tbsp cumin powder
- 1 tbsp coriander seed
- 1 tbsp Curry powder
- 2 tbsp Sugar
- 2 cloves Garlic
- 1 c medium onion
- 1 Carrots
- 2 Kale
- 1 tsp salt
- 1 tsp pepper

Directions

Marinating the Chicken
1. Marinate the chicken breast with garlic, cumin powder, turmeric powder, coriander seed, salt, and pepper. Marinate for at least 30 minutes.
Prepping the Vegetables
1. Prep the onion, carrots, and kale.
Cooking the Chicken
1. Pan sear the chicken in a pan until the outside is golden then remove from the pan.
Preparing the Curry
1. In the same pan, add onion and carrots.
2. Cook until the onion is soft.
3. Add curry powder, turmeric powder.
4. Mix well then add coconut milk.
5. Season with sugar, salt, and pepper.
Final Steps
1. Return the chicken to the pan.
2. Add kale then cover the lid.
3. Simmer for 10-15 mins and serve with Naan or rice.
