- 4 clementines
- 0.75 c Extra virgin olive oil
- 4 Eggs
- 0.75 c Sour cream
- 1.5 c Sugar
- 2.5 c Flour
- 2 tsp Baking powder
- 1 tsp Salt
- 1 tsp lemon extract
- 8 oz Cream cheese
- 0.25 c Butter
- 1 c Powdered sugar
- 2 tbsp clementine juice

1. Preheat oven to 350F.
2. Blend clementines, eggs, and sour cream until smooth.
3. Pour it into a mixing bowl.
4. Add oil and sugar.
5. Whisk until well combined.
6. In another bowl, mix the dry ingredients.
7. Now add the wet ingredients to the dry ingredients.
8. Make sure the batter is smooth.
9. Gently pour it into the prepared cake pan and bake for an hour.
10. Once out of the oven, let it completely cool.
For the Frosting
1. After cooling, combine cream cheese, butter, powdered sugar, and clementine juice.
2. Mix until smooth.
3. Spread onto the cake.
4. Decorate it with candied clementines.
