Main Ingredients
- 1 c kimchi
- 2 c day-old cooked rice
- 0.5 can spam
- 1 tbsp Garlic, minced
- 1 Scallion, separate white and green parts
- 0.5 Yellow onion, diced
- 1 tsp Oil
- 1 tbsp Sesame oil
- sunny side up egg
- shredded nori
- Sesame seeds
- 2 tbsp kimchi juice
- 1 tbsp gochujang
- 1 tbsp Light soy sauce
- 0.5 tsp Sugar

Preparation of Ingredients
1. Dice onion, garlic, scallion, kimchi, and spam.
Preparing the Sauce
1. In a mixing bowl, add kimchi juice, gochujang, soy sauce, and sugar. Mix well.
Cooking the Spam and Vegetables
1. Heat oil in a wok or skillet over high heat. Add spam, fry until they turn crispy.
2. Add onions, garlic, and white parts of scallion. Quickly stir fry for 20 seconds.
3. Add the kimchi and stir for 3 minutes until they turn soft and the liquid is evaporated.
Adding the Rice and Sauce
1. Add the day-old rice and break up the clumps as you stir.
2. Add the sauce and mix well.
3. Turn off the heat and drizzle sesame oil.
Garnishing and Serving
1. Garnish with fried egg, sesame seeds, scallions, and shredded nori.
