- 1 lb red beans
- 1 Bay leaf
- 4 clove Garlic
- 2 tsp Salt
- 1 tsp Black pepper
- 6 c Chicken stock, or water
- 2 tbsp Oil
- 3 c cooked white rice

Preparing the Beans
1. Sort through the beans and remove any debris or broken pieces.
2. Rinse well and add to the pot of a pressure cooker.
3. Add the bay leaf, garlic, salt, pepper and chicken stock.
4. Seal and cook on high pressure for 45 minutes.
5. Allow to naturally release for 15 minutes before releasing any residual steam.
6. Carefully open, taste and adjust seasoning as needed.
Preparing the Rice
1. Heat a large skillet over moderate heat with the oil.
2. Use a slotted spoon to transfer about 2 cups of beans to the skillet.
3. Some of the liquid is okay, but you want to drain off as much as possible.
4. Fry for 2 to 3 minutes.
5. Add the rice, spoonfuls at a time, gently mixing after each addition.
6. The rice should be evenly coated in the beans and the liquid.
7. If it seems too dry or too white in some parts, you can add a few more beans or a splash or two of liquid.
8. Cook, stirring occasionally, over low heat for 8 to 10 minutes.
9. Serve with a dollop of crema or sour cream and enjoy!
