- 120 g Chickpea flour
- 40 g oatmeal flour
- 50 g powdered cocoa
- 100 g Brown sugar
- 2 tsp Baking powder
- 100 g Peanut butter
- 1 Tbs Chia seeds, mixed with 3 tbsp of water
- 1.25 cup Almond milk, room temperature

1. Pre-heat your oven to 180ºC/350ºF.
2. Place your muffin paper cups in a small muffin baking tray.
3. In a bowl, mix the chickpea flour, oatmeal flour, cocoa, sugar and baking powder until fully integrated. Add the milk, chia and peanut butter. Whisk until you get a homogenous and smooth dough. Fill each space of the baking tray with 3/4 of mixture, gently tap it to release any leftover air bubbles. Bake for 25 minutes or until it’s dry in the center when sticking it with a toothpick.
4. Remove from the oven and chill for 5 to 7 minutes before removing from the tray. Share and enjoy.
1. This muffins are high on protein thanks to the chickpea flour that, in each cup, provides 20g of protein of plant origin.
