Ingredients

Cake
- 0.25 c Butter, room temperature
- 0.25 c vegetable shortening
- 1.5 c Sugar
- 1 tsp Vanilla extract
- 2 Eggs, room temperature
- 1 c Milk, lukewarm
- 0.75 c brewed coffee
- 1.75 c Flour
- 0.75 c Cocoa powder
- 0.125 tsp Diamond Crystal baking salt
- 0.75 tsp Baking soda
- 0.75 tsp Baking powder
- 4 oz Coffee, to soak the cake
Icing
- 8 oz Mascarpone cheese
- 1 c Powdered sugar
- 1 tbsp instant cappuccino powder
- 1 c Cocoa powder
- 1 c heavy whipping cream

Directions

Preparation
1. Generously grease and line two 6-inch by 9-inch round cake pans.
2. Preheat the oven at 350F.
Creaming the Ingredients
1. Cream butter, vegetable shortening, sugar, and vanilla until light and fluffy.
2. Then add eggs.
3. Now pour milk and coffee into the batter.
4. Blend well.
Combining Dry Ingredients
1. Combine flour, baking soda, and baking powder.
2. Gently spoon into the mixer.
3. Occasionally scrape off the sides of the bowl so the batter is well combined.
Adding Cocoa Powder
1. Add Diamond Crystal’s baking salt to a bowl of cocoa powder.
2. Mix with a fork.
3. Then add it to the batter while the mixer is turned off.
Baking the Cake
1. Once you feel it’s well mixed, pour it into prepared pans.
2. Bake it for 50 minutes or until the toothpick inserted in the center comes out clean.
3. Cool for 15 minutes before removing the cake from the pans.
Final Touches
1. Once the cake is completely cooled off, brush some freshly brewed coffee on the cake.
2. Then whip up some mascarpone chocolate icing and layer it evenly.
3. Serve it with a hot cup of cappuccino!
