Ingredients

Taco
- 6 hardshell tacos
Taco Filling
- 1 c (vegan) cheese
- 1 Onion, small, finely diced
- 2 clove Garlic, finely diced
- 0.5 c Walnuts
- 1 c kidney beans
- 2 tsp taco seasoning
- 1 tbsp Olive oil
- 0.5 tsp Salt, or to taste
- 0.5 tsp Pepper, or to taste
Avocado-Mango Salsa
- 1 c Cherry tomatoes, halved or quartered
- 1 Avocado, cubed
- 1 mango, cubed
- 1 c Cilantro leaves, loosely packed, finely chopped
- 1 jalapeño pepper
- 0.25 Red onion, finely diced
- 1 Lime, juiced
- 0.5 tsp Salt
- 0.5 tsp Pepper

Directions

Start Cooking
1. Heat up olive oil in a pan over medium-high heat.
2. Add in the diced onion and a pinch of salt, and sauté until the onion is translucent.
3. Then, add in minced garlic and cook for another 30 seconds.
4. Next, add in the beans and taco seasoning and cook for an additional minute.
5. Let the mixture cool slightly.
Prepare the Filling
1. In a food processor, pulse walnuts a few times until they are roughly chopped.
2. Then, add in the bean mixture and pulse a few more times until everything is well combined.
3. Return the mixture to the pan and scramble for a few more minutes.
Prepare the Tacos
1. Arrange the taco shells in a baking tray and stuff them with the bean filling.
2. Sprinkle some vegan cheese on top and bake at 395 degrees F until the cheese has melted.
Prepare the Avocado-Mango Salsa
1. Simply mix together all the salsa ingredients.
2. Serve alongside the tacos and enjoy.
