- 1 lb lamb
- 0.5 Salt, by weight (about ½ tsp diamond crystal kosher salt per lb). If you’re not using the teriyaki sauce, up this to 1%
Spice Blend (bulk recipe to have extra)
- 0.333 c cumin seed
- 0.25 c fennel seed
- 1 tsp Sichuan peppercorn
- 3 tbsp Chili flakes, of choice (depending on how spicy you want it)
- 1.75 tsp Sugar, raw cane preferred
- 1 tsp msg

1. Form lamb onto skewers as indicated in video. Optionally allow to sit in your fridge for a few house to firm up.
2. Grill lamb skewers over high heat until cooked through, spraying with oil before placing them on the grill.
3. Optionally brush with teriyaki sauce 15 seconds before pulling them off the girll.
4. While the meat rests, mix together all of the spice blend ingredients.
5. Toss lamb until thoroughly coated in the spice mix and enjoy!
