Ingredients

- 8 Tomatoes
- 0.25 c water
- 2 tbsp Olive oil
- 2 tbsp ghee, or butter
- 1 Onion, medium (1/2 large)
- 2 tbsp ginger garlic paste
- 3 lb chicken
- 0.5 c Yogurt
- 3 tsp Salt, according to taste
- 2 tsp Cayenne
- 2 tsp Chili flakes
- 1 tsp Turmeric powder
- 3 tsp coriander powder
- 2 tsp cumin powder
- 1 tsp nigella seeds
- 2 tsp karahi masala
- 3 thai chillies
- coriander leaves
- 1 tsp garam masala
- 0.5 tsp Black pepper

Directions

1. Chop off tomato ends and slice them into half. Place them face down in the water in a large flat bottomed pan. Place on low heat and cover with a lid for about 15-20 min.
2. Chop onion into thin slices.
3. Heat oil and butter in a large wok over medium heat. Add the onions and cook for about 7 min until it softens and starts to golden. Add ginger garlic paste and cook for another minute.
4. Add the chicken and turn up heat a bit. Mix and sauté the chicken for about 5-7 min until it picks up some color.
5. Use a tong to remove the peels from tomatoes and use a spatula to mash tomatoes.
6. Add tomatoes, spices (except garam masala and pepper), chillies and yogurt to chicken. Mix and cook on medium high heat for about 20 min. You want the water to almost dry out and the “masala” to simmer, cook down and darken in color and aroma. It should become a deep red color.
7. Garnish with garam masala, pepper and coriander.
8. Serve with some toasted naan and enjoy!
