- 400 g thin-sliced beef
- 200 g enoki mushroom
- 1 Onion
- 2 Eggs
- 2 Green onion, sliced
Sauce
- 1 clove Garlic, minced
- 0.25 c Soy sauce
- 1 tbsp cooking sake
- 1 tbsp Mirin
- 1 tbsp Sesame oil
- 0.5 c water

Directions

Prepare the sauce
1. In a shallow dish, combine the minced garlic, soy sauce, cooking sake, mirin, water, and sesame oil.
Prep the enoki mushrooms
1. Cut the roots off the enoki mushrooms, leaving enough at the base so they stay connected.
2. Break the enoki into small sections and place them in a bowl of lukewarm water to clean.
3. Drain the mushrooms once they're clean.
Assemble the enoki beef rolls
1. On a clean surface, lay out a slice of beef and place a small bunch of enoki mushrooms on top.
2. Roll the beef tightly around the enoki at a slight diagonal, ensuring an even wrap.
3. Repeat this process for the remaining slices of beef.
Cook the onions
1. In a frying pan, stir-fry the sliced onions until they're slightly softened, creating a flavorful base for the enoki beef rolls.
Cook the enoki beef rolls
1. Place the enoki beef rolls on top of the cooked onions in the pan.
2. Pour the prepared sauce over the rolls, making sure they're well-coated.
3. Cover the pan with a lid and let the rolls simmer until the beef is cooked through.
4. Make sure to flip the rolls once to ensure even cooking on both sides.
Add the egg and green onions
1. In a separate bowl, whisk together the two eggs.
2. Drizzle the beaten eggs over the enoki beef rolls and top with the sliced green onions.
3. Cook for an additional 3-4 minutes, allowing the egg to set.
