- 6 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1.5 c milk
- 3 tbsp whole grain mustard
- 0.5 tsp nutmeg
- 2 bread
- 3 ham slices
- 3 oz gruyere
- 1.5 oz parmesan
- 2 dill sprigs
- Kosher salt, to taste
- Black pepper, to taste

Preparation of Bechamel Sauce
1. Preheat oven to 400’ F.
2. Melt butter in a medium saucepan over medium heat until foamy.
3. Add in flour and cook, stirring constantly for about 3 minutes, until foamy and raw flour flavor is gone.
4. Whisk in milk and add a couple of dill sprigs.
5. Continue whisking until the sauce is thick (3-5 minutes).
6. Remove from the heat and whisk in 2 tbsp of mustard and nutmeg.
7. Season with salt.
Preparation of Sandwich
1. Line a ¼ sheet pan with parchment paper and lay 2 slices of bread on it.
2. Butter the tops of both slices of bread with remaining butter.
3. On one of the slices, layer your ham, a nice slathering of bechamel (end to end coverage) and gruyere.
4. On the other slice, spread the remaining mustard.
Final Steps
1. Close the sandwich (butter/mustard side down) and slather the top with more bechamel (end to end).
2. Grate some parmesan on top of that, season with pepper and garnish with dill sprigs.
3. Bake in the oven for about 15 minutes or until the top is nicely browned.
