Polenta Ingredients
- 1 c Polenta
- 4 c water
- Salt, to taste
- 1 c Parmigiano reggiano
- 1 tbsp Butter
Mushrooms Ingredients
- 1 c Portobello mushrooms, chopped
- 1 c shiitake mushrooms, chopped
- 0.25 c Olive oil
- 1 Shallot, chopped
- 2 clove Garlic, thinly sliced
- Salt, to taste
- Pepper, to taste
- 1 sprig Rosemary, chopped
- 2 tbsp Butter
- Pecorino Romano

Instructions for Polenta
1. Add water in a pot and salt to taste.
2. Once it just about starts to steam, start adding polenta.
3. Continue mixing it with a wooden spoon until it’s smooth, well blended and absorbs all liquid.
4. It should start bubbling. Be very careful as it can burn you.
5. Add in some butter and grated Parmesan cheese.
6. Mix and let it sit on the side for 5 minutes.
Mushroom Instructions
1. In a large frying pan, pour olive oil.
2. Once hot, add mushroom.
3. Clean the mushroom with a damp paper towel.
4. You can chop the mushrooms or break it apart with your hands.
5. Sprinkle some salt and pepper.
6. Cook until rosy gold on a medium flame.
7. Add crushed shallot, garlic, rosemary and butter.
8. Let the butter get slightly golden before turning off the heat.
9. Serve it with polenta.
10. Add shaved Pecorino Romano and rosemary sprigs as garnish.
11. Enjoy!
