Ingredients

- 4 Tbs Avocado, diced
- 1 Bay leaf, ideally fresh
- 200 g Chicken breast, cooked and shredded
- 3.5 cup Chicken stock
- 2 Tbs Cilantro, washed, disinfected, lightly chopped
- 12 Corn chips, dehydrated
- 1 epazote leaf
- 1 tsp Fresh black pepper
- 2 clove Garlic
- Oil spray
- 1 Onion, chopped
- 40 g panela cheese, diced, can substitute with cotija
- 2 pasilla pepper, seedless and toasted
- 1 tsp Salt flower, or salt, plus more as needed

Directions

1. Spray the bottom of a large pot with oil and add the garlic and onion; cook until they soften and start changing color.
2. Add a cup of stock to the pot with the pasilla pepper, bay leaf, salt and pepper. Bring to a boil until the pepper softens.
3. Blend this mixture with more stock until fully incorporated. Pour it back into the pot and add the rest of the chicken stock, shredded chicken and epazote. Simmer for 5 more minutes on low heat.
4. Serve the soup in bowls with corn chips and garnish with panela cheese, avocado and cilantro.
