Chicken Recipe
- 1 chicken
- 4 tbsp EVOO
- Jamaican Jerk Seasoning
- Kosher salt
- 1 Lime, juiced
- 2 Limes, halved for base of chicken
- 2 tbsp Butter, melted

1. Preheat your oven to 357F.
2. Season your chicken with some Jamaican jerk seasoning all over the skin front and back and underneath the skin.
3. Add your olive oil to help spread out the seasoning.
4. Then repeat another coat of seasoning.
5. Add a touch of kosher salt to taste.
6. Drizzle some wine juice all over your chicken and in the bottom of the pan.
7. Place four lime halves underneath the chicken. Two underneath the thigh area and two underneath the breast area.
First Cooking Phase
1. Cover your chicken with foil and place in the oven and cook for 25 minutes.
Second Cooking Phase
1. After 25 minutes, drizzle your melted butter all over the top of the chicken and remove the foil.
2. Let your chicken finish cooking uncovered until the internal temperature has reached 165° F.
Final Steps
1. Remove your pan from the oven and baste with more of your chicken drippings.
2. Your chicken should come out tender, flavorful and delicious!
3. Enjoy!
