Sourdough Croutons
- 1 loaf of sourdough
- 1.5 c Olive oil
- salt and pepper, to taste
Salad Dressing
- 2 Egg yolks
- 1 tbsp spicy mustard
- 0.5 tsp Worcestershire sauce
- 2 anchovies
- 2 tbsp anchovy oil
- 0.5 Lemon, juiced
- 4 clove Garlic, grated/pressed
- 0.25 c Olive oil
- 0.5 c Parmesan cheese, grated
- salt and pepper, to taste
- 1 head of romaine lettuce

To make the croutons
1. Start by preheating your oven to 425 F.
2. Slice your bread into ~0.5-1 inch cubes (your preference).
3. Place cubes into a large bowl.
4. Thoroughly cover the bread cubes with olive oil and toss them around.
5. Season with freshly cracked black pepper.
6. Evenly spread them out on a sheet tray and bake for about 15-20 minutes or until golden brown.
7. Immediately hit them with some salt!
For the salad
1. Add the egg yolks, mustard, Worcestershire, anchovies, anchovy oil, lemon juice, and garlic to a large bowl and thoroughly mix together.
2. Add the olive oil and cheese intermittently.
3. Salt and pepper to taste (taste with lettuce and croutons).
4. Toss lettuce and croutons with dressing and top with some shaved parmesan!
