Ingredients

Salad
- 1 16oz bag tri-color slaw
- 1 can Mandarin oranges
- 0.5 c edamame
- 0.25 c Scallions, sliced
- 1 lb Chicken breast, sliced
- 4 tbsp Avocado oil, separated, 2 tbsp for chicken, 2 tbsp for paleo tortillas
- 1 tsp pink Himalayan salt
- 0.333 c slivered almonds
- 2 paleo tortillas
Dressing
- 3 tbsp extra-virgin olive oil
- 0.25 c Apple cider vinegar
- 0.25 c hoisin sauce
- 1.5 tbsp Soy sauce, gluten free
- 1 tsp Honey
- 1 tsp Ginger, fresh

Directions

For the salad
1. In a large salad bowl add tri-color slaw mix.
2. Drain juice from Mandarin orange can, add to salad bowl with almonds, scallions, and edamame.
3. In a pan with olive oil add sliced chicken breast.
4. Season with salt and cook on low until cooked with internal temperature at 165 degrees.
5. Top salad with chicken and toss well.
For the wonton strips
1. Preheat air fryer to 360 degrees.
2. Place parchment paper on air fryer rack and set aside.
3. Using a pizza cutter slice paleo tortillas into wonton shaped strips.
4. Spray with avocado oil and air fry for 2-4 minutes until strips are golden brown and crispy.
5. Top salad with wonton strips.
For the dressing
1. In a small bowl mix together dressing ingredients.
2. Top salad with dressing and toss well.
