- 1 pack boneless salted cod (bacalao)
- 2 small ripe avocados
- 0.5 small yellow or red onion
- 2 ripe tomatoes
- 3 tbsp Extra virgin olive oil
- 1 tsp vinegar
- Salt, to taste
- Pepper, to taste

Directions

Rinsing and Preparing the Fish
1. Rinse the salt off the fish very well.
2. You can also soak overnight or for a few hours.
3. I usually rinse the fish very well, then boil it to remove the excess salt.
4. Sporadically taste the fish to make sure it’s to your liking.
5. Let cool and rinse with cold water.
Preparing the Gazpacho
1. In a large bowl, mix the avocados, onion, tomatoes, olive oil, vinegar or lemon juice.
2. Pull the fish into flakes and make sure there are no stray bones.
3. Add the fish to the bowl with the rest of the ingredients and mix very well.
4. Add pepper to taste and salt if needed. The fish might still have some remaining salt.
5. Serve immediately.
6. Enjoy gazpacho as a salad, with a side of “vianda” aka boiled root vegetables, or as a sandwich inside of a soft roll.
