- 1 russet potato
- 8 oz ground sausage
- 0.5 Yellow onion, diced
- 2 red chili peppers
- 3 Serrano peppers, sliced
- 3 tbsp Oil
- 0.25 tsp Sichuan peppercorn powder
- 0.5 tsp cayenne pepper powder
- 0.5 tsp Salt
- 0.25 tsp Black pepper
- 0.5 c shredded cheddar cheese

Preparation of Ingredients
1. Peel one potato and cut it into small cubes. Keep them soaked in cold water while preparing the other ingredients.
Cooking the Sausage
1. In a cast iron over medium-high heat, add 1 tbsp oil and ground sausage.
2. Season with Sichuan peppercorns and cayenne pepper.
3. Cook until the sausage turns brown, transfer and set aside.
Cooking the Potatoes
1. Drain the potatoes and pat dry.
2. Add the remaining 2 tbsp oil to the skillet and add the potatoes, season with salt and black pepper.
3. Cook until they begin to soften and brown on the sides.
Adding the Vegetables
1. Add onions, red and green chili peppers.
2. Cook until the onions turn translucent.
Final Steps
1. Add the cooked sausage back and stir.
2. Sprinkle 1/2 cup shredded cheese and mix well.
3. Make 3 indents and crack eggs on top.
4. Place the skillet in the oven at 400 F for about 10 minutes until the egg whites are set but the yolks are still runny.
Garnishing and Serving
1. Garnish with black pepper, red chili powder, and scallions.
2. Enjoy!
