For the seasoning blend
- 1 tsp Kosher salt
- 1 tsp Black pepper
- 2 Tbs Garlic powder
- 2 Tbs Onion powder
- 2 Tbs Smoked paprika
- 2 Tbs jerk seasoning
- 1 Tbs Ground ginger
- 1 Tbs Cumin
- 1 Tbs Chili powder
- 1 Tbs Italian seasoning
For the sauce
- 1 Tbs jerk marinade
- 1 Tbs seasoning blend
- 1 White onion, diced
- 6 Garlic, cloves, minced
- 1 can San Marzano tomatoes
- 1 Tbs green seasoning
- 1 cup Pancetta, or diced bacon
- 8 oz Tomato paste
- 1 Tbs Sugar
- Olive oil
- 2 Tbs Butter
For the chicken
- 6 Boneless skinless chicken thighs
- 2 Tbs seasoning blend
- 1 Tbs jerk marinade
- 1 Tbs green seasoning
For the shrimp
- 1 lb Shrimp, cleaned, peeled, and deveined
- 1 Tbs seasoning blend
- 1 Tbs jerk marinade
For the jerk ricotta
- 1 Ricotta, container (32 oz. per)
- 1 Tbs jerk marinade
- 0.5 cup Parmesan
- 1 Egg
- 3 cup fried sweet plantain
- 1 Sharp cheddar cheese, block (8 oz. per), shredded
- 1 pepperjack cheese
- 16 oz Mozzarella cheese, shredded
To assemble
- 1 lasagna noodles
- 1 Tbs Olive oil
- Kosher salt
- Oil

1. Add your chicken thighs to a bowl.
2. Mix with the seasoning, seasoning blend, green seasoning, and jerk marinade.
3. In another bowl, add shrimp, seasoning blend, green seasoning, and jerk marinade.
4. Cover both bowls and place them in the fridge to marinate for at least 30 minutes.
5. Preheat your oven to 350 degrees.
6. Set a large frying pan on the stove on medium heat.
7. Once the pan smokes, add oil.
8. Add your chicken thighs and sear on both sides for 4 minutes until it develops a nice crust.
9. Place the chicken in the oven to finish cooking for about 20 minutes.
10. Remove from the oven and let it rest on a cutting board.
11. In another pan, add oil once the pan smokes.
12. Add shrimp and cook for about 90 seconds per side.
13. Remove and place to the side.
14. Use this time to fry your plantain.
15. To a large frying pan, add olive oil and butter.
16. Add diced onion and pancetta.
17. Cook until the pancetta is crispy.
18. To a saucepot, add the pancetta and onion.
19. Add green seasoning, jerk marinade, minced garlic, tomatoes, tomato paste, seasoning blend, and sugar.
20. Simmer for about 15 minutes stirring occasionally.
21. In a large pot, add water and boil.
22. Once the water is boiled, add olive oil, salt, and lasagna noodles. Cook until al dente.
23. Drain the noodles.
24. In a large bowl, add ricotta, egg, grated parmesan, and jerk marinade.
25. Mix until well combined.
26. Grab a long casserole pan and layer your lasagna (tomato sauce, noodles, jerk ricotta mixture, chicken thighs, shrimp, plantain, cheese, and repeat).
27. Bake at 375 degrees for 30 minutes covered with aluminum foil, and the remaining 10 minutes uncovered.
28. Remove from the oven and let cool for at least 10-15 minutes.
29. Serve and enjoy!
