For the chicken
- 3 Tbs Olive oil
- 1 clove Garlic
- 1 chipotle in adobo, in adobo
- pinch salt and pepper
- 2 Tbs Fresh rosemary, chopped
- 1 bottle Beer, (stout, porter or dark ale)
- 2 Chicken breasts, cleaned
To serve
- 1 tsp Olive oil
- 0.5 Red onion, sliced
- 1 beefsteak tomato, in thick slices
- 2 Tbs Mayonnaise
- 4 slice Bread, of a rustic variety

For the chicken
1. Blend together the olive oil, garlic, chipotle, salt and pepper until homogenous. Stir in the beer, rosemary and split in two. With one half, marinate the chicken, chill in the fridge covered for an hour. Reserve the other half to serve.
2. Heat a tbsp of olive oil in a grill, cook each chicken breast for 8 minutes until perfectly cooked.
To serve
1. Brush the vegetables with olive oil and grill them for 5 minutes or until soft and have grill marks. Slice the chicken with diagonal cuts.
2. Spread each bread slice with ½ tbsp of mayonnaise and place a layer of vegetables, next the chicken and top with another slice of bread. Enjoy immediately.
