Ingredients

Soup
- 1 lb Chicken breasts, boneless, skinless, cut into bite-sized pieces
- 1 tbsp Vegetable oil
- 1 Onion, finely chopped
- 3 clove Garlic, minced
- 1 inch Ginger, grated
- 2 tbsp tikka masala paste
- 1 14 oz can diced tomatoes
- 4 c Chicken Broth
- 1 c Heavy cream
- Salt, to taste
- Black pepper, to taste
- Cilantro leaves, fresh, for garnish
Tikka Masala Seasoning
- 0.5 tsp Ground cumin
- 0.5 tsp ground coriander
- 0.5 tsp Paprika
- 0.25 tsp Cayenne pepper, adjust to your spice preference
- 0.25 tsp Turmeric

Directions

Preparation of Chicken
1. In a large soup pot, heat the vegetable oil over medium-high heat.
2. Add the chicken pieces and cook until they are browned and fully cooked, about 5-7 minutes.
3. Remove the cooked chicken from the pot and set it aside.
Preparation of Vegetables
1. In the same pot, add the finely chopped onion, minced garlic, and grated ginger.
2. Sauté for about 3-4 minutes or until the onion is soft and translucent.
Preparation of Tikka Masala Seasoning Mix
1. Combine the ground cumin, ground coriander, paprika, cayenne pepper, and turmeric in a small bowl.
Adding Seasoning to the Pot
1. Stir in the tikka masala paste and the tikka masala seasoning mix into the pot.
2. Cook for about 2-3 minutes to release the flavors.
Adding Tomatoes and Broth
1. Add the can of diced tomatoes with their juices to the pot.
2. Stir well.
3. Pour in the chicken broth and bring the mixture to a boil.
4. Reduce the heat to a simmer and let it cook for about 10-15 minutes, stirring occasionally.
Blending the Soup
1. Use an immersion blender or transfer the soup to a regular blender (in batches if necessary).
2. Blend until the soup is smooth.
Final Steps
1. Return the cooked chicken pieces to the pot.
2. Pour in the heavy cream and stir well.
3. Cook for an additional 5-7 minutes until the soup is heated through.
4. Season the soup with salt and black pepper to taste.
5. Garnish with fresh cilantro leaves.
