Main Ingredients
- 3 Chinese sausage or lap cheong
- 2 c day-old cold rice
- 2 Eggs, beaten
- 0.25 tsp Salt
- 3 tbsp Oil, divided
- 0.25 Onion, diced
- 1 Scallion, separate white and green parts
- 2 tbsp Light soy sauce
- 0.5 tsp Dark soy sauce
- 1 tsp chili oil
- 0.25 tsp White pepper

Prepare the ingredients
1. Cut Chinese sausage into thin slices and set aside.
2. Crack two eggs in a bowl and add salt. Beat them until the whites and yolk are blended.
3. Prepare the sauce by combining the listed ingredients.
Start cooking
1. Heat a wok on high until smoking. Add 2 tbsp oil and pour in the eggs. Scramble until 80% cooked. Transfer out and set aside.
2. Add the remaining 1 tbsp oil to the wok over medium heat. Add diced onion and white parts of scallion. Stir for 30 seconds until fragrant.
3. Add the cold rice. Stir and break up any clumps.
4. Pour the sauce mix around the wok and stir until everything is well combined.
5. Add the eggs back and mix well. Then add the green parts of scallion and turn off the heat. Give it one last mix.
