- 1.5 pounds Baby potatoes
- 0.5 c vegan cheese
- 0.5 tsp Salt, or to taste
- 0.25 tsp Pepper, or to taste
- 0.25 tsp Chili flakes, or to taste
- 2 tbsp Olive oil

Preparation of Potatoes
1. Start by washing and cutting small potatoes in half.
2. Carefully score them diagonally and then coat them with olive oil, salt, pepper, and chili flakes (if desired).
3. Line a baking tray with parchment paper and brush it with olive oil.
4. Grate your cheese on it, and then place the potatoes with the scored side on top of the cheese.
Baking Process
1. Bake at 395 F for about 50 minutes until the potatoes are soft (test if you can pierce them easily with a knife).
