Preparation of Pudding
1. Preheat oven to 350.
2. Add the ingredients of the pudding to a saucepan and whisk on medium heat for about 15 to 20 minutes. Whisk continuously so pudding doesn’t stick to the bottom of the pan.
3. Line up bananas, wafers, and chessman cookies in a dish and pour the pudding over it. Set to the side while we prepare the cheesecake.
Preparation of Cheesecake Crust
1. To a bowl, mix together the cookie crumbs, butter, and sugar.
2. Add to the bottom of your baking dish. Pat flat and build up a wall on the sides.
3. Bake for 7 minutes.
Preparation of Cheesecake Filling
1. To a large mixing bowl, beat the cream cheese by itself.
2. Then add in the sugar and vanilla extract and beat until soft.
3. Add in 2 eggs one by one and beat until combined.
4. Mash a ripe banana and fold it into the mixture along with the sour cream.
Baking the Cheesecake
1. Add half of the batter to the crust and bake for about 20 minutes until the top is set.
2. Remove from oven and top with about 1/3 to 1/2 of the banana pudding then the remaining cheesecake batter.
3. Cook in a water bath for 35 to 40 minutes or until the cheesecake is set.
Final Steps
1. Allow to cool for 6 hours.
2. Once cooled, top with whipped cream, crushed vanilla wafers, and line the top with chessman cookies.
3. Slice and enjoy.
