Ingredients

Rice
- 2 tbsp avocado or olive oil
- 2 cans chicken vienna sausages
- 2 tbsp Sofrito
- 2 tsp Healthy Rican Salt-Free Adobo
- 2 tsp Healthy Rican Sazón
- 3 c Rice, medium grain white and jasmine recommended
- 3 c broth
Beans
- 2 tbsp Avocado oil
- 0.5 c ham
- 2 tbsp Healthy Rican Sofrito
- 0.25 c Onions, diced
- 2 tbsp cento sweet pimientos
- 1 tbsp garlic paste
- 1 tbsp Healthy Rican Sazón
- 1 tbsp organic tomato paste
- 4 c organic pinto beans
- 1 tbsp organic bouillon
- 0.75 c Potatoes, diced and/or calabaza/squash
- Pink Himalayan salt
- Culantro or Cilantro

Directions

Rice Preparation
1. Heat your pot or "caldero" to medium/high heat, and add your oil, sofrito, adobo, sazón, and broth concentrate if using. Mix well until the sofrito releases its aroma.
2. Add the rice, sausage slices and broth or water. Mix well.
3. The liquid should be 1/2" over the rice. Try the liquid to make sure it has enough flavor and salt to taste. You will want this liquid to be highly seasoned as it will determine the final flavor of the rice.
4. Allow the liquid to come up to a boil and for the rice to absorb all the visible liquid.
5. Once the liquid evaporates, stir the rice making sure you bring the rice on the bottom to the top, reduce the heat to low and cover.
6. Allow it to steam for 20-25 minutes. It's done when all the liquid is absorbed and the grains are fluffy and fully cooked.
Beans Preparation
1. On high heat, add the oil, ham, sofrito, onions, peppers, garlic, and stir fry for about a minute.
2. Add the sazón, tomato sauce and stir. Add the beans, broth (bouillon and water), potatoes, and salt to taste. Allow to boil.
3. Reduce heat to low, cover, and simmer until the potatoes and/or squash are cooked.
4. Top with culantro or cilantro if desired.
5. Enjoy with your favorite rice.
