- 2 Eggs
- 2 c blanched almond flour
- 1 tbsp Apple cider vinegar
- 4 tbsp Pure maple syrup, or honey
- 0.5 tsp Baking soda
- 2 tbsp melted coconut oil
- 1 tsp Vanilla extract
- 1 c sugar free chocolate chips

1. First, preheat oven to 350 degrees Fahrenheit.
2. Heavily spray a muffin pan with nonstick spray.
Mixing the Ingredients
1. In a large mixing bowl, add all ingredients except chocolate chips.
2. Stir to combine.
3. Then, fold in chocolate chips.
4. Stir to combine.
Baking the Muffins
1. Divide batter into 8 muffin cavities.
2. If desired, sprinkle more chocolate chips on top.
3. Bake for 16 to 18 minutes or until muffins have risen and toothpick inserted comes out clean.
Cooling and Removal
1. Finally, remove from oven.
2. Allow muffins to cool in pan for 10 minutes.
3. Then carefully remove from pan.
