- 1.333 c Sugar, 300g
- 3 Eggs
- 1.667 c Flour, 225g
- 0.5 tsp soda
- 1.75 tsp Baking powder
- 0.75 tsp Salt
- 1 tbsp Cinnamon
- 0.5 tsp Nutmeg
- 0.25 tsp Cloves
- 1 tsp vanilla
- 2 c Carrots, shredded, 200g
- 0.5 c Zucchini, shredded, 80g
- 0.75 c Walnuts, chopped, roasted
- 0.333 c Orange, chopped
Cream Cheese Frosting
- 6 oz Cream cheese, 170g
- 3 tbsp Unsalted butter, 42g
- 125 g icing sugar

1. Preheat oven to 350F and line your baking pan.
2. Whisk together oil and sugar, add in the eggs and mix for 1-2 min until a thick mixture forms.
3. Sift together all the remaining dry ingredients. Fold into the egg mixture, add vanilla and fold in.
4. Add the carrots and zucchini and mix in gently. Lastly, fold in the chopped walnuts and oranges.
5. Pour the mixture into your pan and bake for about 30-35 min until a toothpick comes out clean.
Make the cream cheese frosting
1. Whisk together the ingredients for 2/3 min at room temperature.
Final Steps
1. Cover the cake with frosting once it has cooled, and serve!
