- 5 oz baby king oyster mushrooms
- 1 c panko
- 0.25 c arrowroot starch
- 2 eggs
- 1 tsp salt
- 1 tsp onion powder
- 1 tsp Garlic powder
- 0.5 tsp mushroom powder
- 0.25 tsp cayenne
- 0.333 c kewpie mayo
- 0.333 c sweet chili
- 3 tbsp sriracha

Preparing the ingredients
1. Cut your mushrooms into thin strips (this will keep it from being too chewy).
2. In a small bowl, whisk together your eggs and set aside.
3. In a separate small bowl, add your panko.
4. In a medium-sized bowl, mix together your arrowroot starch, salt, cayenne pepper, onion powder, garlic powder, and mushroom powder.
5. Place your mushroom strips in the arrowroot mixture, then dip it in the egg wash, and then into the panko. Lightly press the panko on to ensure it sticks to the mushrooms.
Air frying
1. Air fry at 400F for 2-3 minutes or until golden brown.
Preparing the sauce
1. In a large bowl, whisk together your sweet chili sauce, kewpie mayo, and sriracha.
2. Once golden brown, toss your mushrooms into the sauce or serve as is, with the sauce as a dip.
