- 2 lbs Yukon gold potatoes
- Salt
- 0.25 c Heavy cream
- 4 tbsp Unsalted butter
- 0.25 tsp Nutmeg, optional
- 0.5 tsp Black pepper
- 3 large egg yolk

Directions

Preparation
1. Preheat oven to 425 and dice potatoes and boil until fork tender.
2. Mash the potatoes together with the cream, 2 tbsp of butter and egg yolks.
3. Add some salt and pepper to taste and nutmeg if you choose to include it.
4. Add to a piping bag and pipe out your potatoes to any shape you’d like.
5. Melt the remaining 2 tbsp of butter and gently coat the tops of the potatoes.
6. Bake for 20-25 minutes or until lightly golden.
Serving
1. Serve as a side with your favorite protein and enjoy!
