Ingredients

- 0.5 c Olive oil
- 1 Onion, medium, thinly sliced
- 6 clove Garlic, minced
- 1 24 oz bag frozen yuca

Directions

1. In a skillet, heat the oil on medium.
2. Add the onion and garlic.
3. Cook for 7 min., until almost soft, stirring occasionally.
4. Cover and reduce heat to low.
5. Cook for 25 minutes, until onions are soft and garlic is fragrant but not browned, stirring occasionally.
6. Season with salt and pepper to taste.
7. In the meantime, heat a large pot of salted water to a boil on medium-high.
8. Add the yuca and return water to a boil.
9. Reduce heat to simmer and cook for 20 minutes, until the yuca is very tender.
10. Drain and transfer yuca to a cutting board.
11. Remove and discard any tough cores from centers of yuca.
12. Transfer yuca to a wide serving bowl.
13. Pour warm onion mixture over yuca, gently stirring to combine.
14. Cover and let stand for 15 minutes, until yuca absorbs the oil.
15. Serve immediately.
