Ingredients

Yakni (broth)
- 1 chicken
- 2 Onions, cut (with skin)
- 1 Garlic, whole
- 2 tbsp Salt, or to taste
- 1 liter water
- 1 Star anise
- 2 black cardamom
- 1 cinnamon stick
- 0.5 tbsp Coriander seeds
- 6 Cloves
- 0.5 tbsp whole black pepper
- 0.5 tbsp Cumin seeds
- 1 Bay leaves
For Rice
- 2 Onions, thinly sliced
- 2 tbsp Ginger, crushed
- 2 tbsp Garlic, crushed
- 0.25 c Cooking oil
- 0.25 c Yogurt
- 1 tbsp Salt
- 1 tbsp Cumin seeds
- 1 cinnamon stick
- 8 cardamom pods
- 2 Star anise
- 4 c Rice
- 6 c broth

Directions

Instructions for the broth
1. This broth is easy. You don’t even have to remove the skin of onions, ginger and garlic. Slice and add it in the pot.
2. In goes the whole spices placed in mesh fabric called bouquet garni.
3. Now add in 5 cups of water and let it simmer on medium heat for 30-45 minutes.
4. Wash the rice and let it soak.
Instructions for the chicken and rice
1. Once the chicken is cooked, remove it and set it aside.
2. Strain the broth and also set that aside.
3. In a pot add oil and once hot add onions.
4. Let it get slightly browned before adding in the crushed ginger and garlic.
5. Cook for a couple of minutes before adding in the chicken.
6. Now add salt, whole spices and broth.
7. Once it comes to a boil, add the rice and let the broth almost get absorbed by the rice.
8. Now put the flame on low and cover it with the lid with fabric or paper towel.
9. Let it simmer for 20 minutes.
10. Fluff the rice before serving.
