- 1 tsp Santa Maria seasoning
- 1 tsp Southwest seasoning
- 0.5 lb Bacon
- 4 Eggs
- 4 Flour tortillas
- 4 oz Grated white cheddar cheese
- 2 tbsp Taco sauce
- 2 tbsp Guacamole salsa

1. Preheat your wood burning smoker or grill to 325 degrees
2. Season the bacon with a southwest seasoning of your choice and cook over direct heat until rendered, about 20 minutes.
3. Remove bacon, allow to drain on a paper towel covered dish
4. Place a cast iron skillet into the grill and allow it to heat for 10 minutes
5. Lay tortillas into the skillet and cook for 5 minutes
6. Crack one egg over the top of each tortilla and season with Santa Maria style seasoning, cook until egg whites are set up.
7. Sprinkle grated cheddar cheese over the top of each egg evenly
8. Chop the bacon and sprinkle on top of the cheese
9. Allow to cook for until cheese is melted, remove from heat and let cool for for 10-15 minutes
10. Drizzle with taco sauce and guacamole salsa, serve warm
