Ingredients

Noodle Soup
- 4 oz wonton noodles/egg noodles
- 5 wontons
- 3 stems bok choy or yu choy
- 2 c unsalted chicken broth
- 1 tsp Salt
- 0.25 White pepper
- 1 tsp Sesame oil
- chili oil
- chopped scallion

Directions

Preparing the Broth
1. Make homemade chicken broth in advance or use store-bought unsalted chicken broth.
2. Add chicken broth to a medium pot and season with salt, white pepper, and sesame oil (if using store-bought, add garlic and ginger slices for additional aromatic flavor).
3. Bring it to a boil and that will be the wonton soup base.
Cooking the Noodles
1. Cook the noodles in a pot of boiling water for 1-2 minutes according to package instructions.
2. Transfer out and drain under cold water to stop the cooking process.
Preparing the Wontons
1. Bring another pot of water to boil and add wontons.
2. If using fresh wontons, cook until they float to the top (3-5 minutes depending on the wonton sizes).
3. If using frozen wontons, bring them back to a boil.
4. Immediately add 1/2 cup of cold water and wait for it to boil for a second time.
Adding the Veggies
1. Add your favorite veggies and bring them back to a boil.
Assembling the Dish
1. Assemble the dish with noodles on the bottom, and add wontons and veggies.
2. Then followed by the flavorful broth and garnish with chili oil (optional) and chopped scallions.
3. Enjoy!
