- 12 oz dried pasta
- 2 tbsp Extra virgin olive oil
- 1 lb chicken Italian sausage
- 0.5 Yellow onion, diced
- 4 clove Garlic, minced
- 1 large zucchini
- 14.5 oz great northern white beans
- 28 oz whole tomatoes, crushed
- 3 c Chicken stock
- Salt, to taste
- Parmesan cheese, serve with

Boiling the pasta
1. Boil the pasta 2 minutes less than package instructions for al dente.
2. Strain and set to the side.
Preparing the sausage and vegetables
1. In a large pot, brown the sausage in the olive oil, breaking it up into bite-sized chunks as it cooks.
2. Add the onion and garlic and sauté for 2-3 minutes or until the onions are translucent.
3. Add the zucchini and sauté for another 2-3 minutes.
Adding the remaining ingredients
1. Add the beans, tomatoes, and chicken stock. Bring to a simmer for 5-10 minutes.
2. Add the pasta and season with salt to taste.
Serving the dish
1. Serve with a drizzle of extra virgin olive oil and some Parmesan cheese.
