Preparation of Ramekins and Preheating the Oven
1. Preheat oven to 350F and prepare two ramekins with butter and cocoa powder.
Preparing the Cake Batter
1. Whisk egg and sugar at high speed for 3-5 min until light in color and thick and ribbony in texture.
2. Sift in the dry ingredients and fold gently until just combined. Take care not to over mix and knock out the air.
3. Carefully transfer batter equally to the 2 ramekins.
Baking the Cake
1. Bake for 13-15 min until a toothpick comes out clean.
Preparing the Hot Chocolate
1. Place all hot chocolate ingredients except chocolate in a pan and whisk. Then add chocolate and place on medium low heat. Cook for about 7-10 min, stirring regularly, until you reach a cream consistency. It should be somewhere in between normal hot chocolate and a ganache (not too thick or runny).
Assembling the Dessert
1. Take your cakes out from the ramekin and slice into two.
2. Place one layer of cake each into 2 glass mugs or dessert cups. Pour about 1/4 cup of hot chocolate in each, followed by the remaining cake layers and hot chocolate.
3. Pipe whipped cream onto the cakes and dust with cocoa powder.
Serving Instructions
1. Serve while still hot! Enjoy.
