- 2 lb yuca root
- 1 cabbage
- 4 Roma tomatoes, diced
- 0.333 c Apple cider vinegar
- Kosher salt
- 1 lb pork skin

Preparing the Yuca Root
1. Using a sharp knife, cut the ends of the yuca root and then cut it into 4-inch chunks.
2. Carefully remove outer peel.
3. Rinse and place in a large pot of cold water.
4. Season liberally with salt and set over medium-high heat.
5. Bring to a simmer and cook until fork tender, about 30 minutes.
Preparing the Cabbage Slaw
1. Finely shred the cabbage and transfer to a large bowl.
2. Fill with cold water and let it sit for 10 minutes.
3. Drain and rinse the cabbage once more, and return to the bowl.
4. Add the diced tomatoes, apple cider vinegar, 1/3 cup water, and a liberal pinch of salt.
5. Mix until evenly combined.
Serving the Dish
1. Cut yuca into small pieces and arrange on a plate or platter.
2. Top with pieces of fried pork skin, cabbage slaw and Chilero if using.
3. Serve immediately and enjoy!
