- 1 Tbs Olive oil
- 0.5 Onion, chopped
- 2 clove Garlic, mashed
- 0.5 Red bell pepper, chopped
- 0.5 Green bell pepper, chopped
- 1 Carrot, chopped
- 1 can Tomatoes, smashed
- 2 Tbs Soy sauce
- 2 Tbs Dried oregano
- 1 tsp Thyme
- 1 tsp Garlic powder
- 1 tsp Onion powder
- 1 tsp Ground cumin
- 1 Tbs Paprika
- pinch cayenne pepper and fresh black pepper
- 1 cup Rice
- 3 cup water or vegetable stock
- 1 cup Chickpeas, cooked
- 1 cup red beans
- 4 Tbs Parsley, washed, disinfected and chopped

1. In a pan, heat the oil and cook the vegetables until softened, add the tomatoes and heat for 5 more minutes. Stir in the soy sauce and spices.
2. Add the rice and pour the vegetables stock, bring to a boil and lower the heat.
3. Simmer for 15 minutes or until the rice is soft and cooked. Add the chickpeas and beans and mix.
4. Serve in bowls with chopped parsley.
5. Share and enjoy.
