- 1 5oz spring mix
- 3 c Chicken breast
- 3 tbsp extra-virgin olive oil
- 1 tsp Black pepper, coarse
- 1 tsp pink Himalayan salt
- 0.75 BBQ sauce
- 1 pack uncured bacon
- 0.25 c shredded carrots
- 1.5 c Corn, canned and drained
- 1.5 c Black beans, canned and drained
- 10 Cherry tomatoes, quartered
- 1 Avocado, diced
- 2 tbsp Cilantro
- 0.5 Red onion, sliced
- 1 Lime, cut in half and into slices
- 1 Red bell pepper, chopped
- 0.25 cup Balsamic vinegar

Prepare the Chicken
1. In a large skillet, heat olive oil on medium heat.
2. Prepare chicken breast by cutting horizontally and dice into even cubes.
3. Place chicken in prepared skillet and season with pink Himalayan salt and pepper.
4. Cook until internal temperature of chicken reaches 165 degrees.
5. Add BBQ sauce, mix well, and remove from heat.
Prepare the Bacon
1. Dice bacon and add to a medium skillet.
2. Cook and remove from heat.
Assemble the Salad
1. In a large flat salad bowl, add spring mix.
2. Top with black beans, sliced red onion, cherry tomatoes, diced red bell pepper, corn, diced avocado, BBQ chicken, shredded carrots, limes, bacon, and cilantro.
3. Top with balsamic vinaigrette.
