- 2 c Flour
- 2 tsp Baking powder
- 0.25 tsp Salt
- 0.75 c Sugar, some reserved for later
- 0.25 c Canola oil
- 1 Egg
- 12 oz ube jam or halaya
- 2 tsp ube extract
- confectioners sugar

1. Whisk together dry ingredients: flour, baking powder, and salt. Set aside.
2. Cream together 3/4 cup sugar and canola oil using a stand mixer or by hand. Whisk in the egg.
3. Add in ube jam and extract and whisk until well combined.
4. Gradually add in flour using a rubber spatula or the stand mixer's rubber spatula.
5. Store the dough in a container for 4 hours or overnight.
6. Form 1-2 inch balls of dough.
7. Roll it lightly in sugar first then powdered sugar. Make sure to add a lot of confectioners sugar (More than you think you need so it can stick to the cookie)
8. Bake at 350 degrees for 11-12 minutes.
9. Let it cool on a drying rack. I pressed down some cookies right after they came out of the oven to shape it well. Ready to eat!
